Monday Menus – Breakfast Burrito

Start the day with breakfast to fuel the day ahead!

Breakfast Burrito

2 eggs

1/4 cup bell pepper, diced
1/4 cup red onion, diced
1/4 cup mushrooms, sliced
1/2 oz. low sodium mozzarella cheese
1 Mission low carb soft taco size tortilla

Scramble eggs with pepper, onion, mushrooms. Top with cheese and fill tortilla. Easy, quick, nutritious. Optional – add a little crumbled bacon or sausage to the pan.
