Mix And Make Casseroles

Do you ever get stuck with what to make? Time is short and you want something fast.


1 pound ground or diced meat (hamburger, sausage, turkey etc) OR
1 1/2 pounds cut up chicken fryer OR
1 pound pork chops, beef roast, pork roast, steak cut into 1" pieces
2 to 3 cups cook beans

Tomato Based Sauce:
2 cups canned tomatoes OR
1 small can tomato paste and 1 1 2/ cans water OR
2 cups tomato sauce OR
1 cup ketchup and 1 cup water OR
1 cup chili sauce and 1 cup water OR
1 cup taco sauce and 1 cup water OR
1 cup barbeque sauce and 1 cup water OR
1 cup salsa and 1 cup water

Cream Based Sauce:
1/4 cup milk and any cream of soup

OR the cheaper version MYO
1 cup milk
2 tablespoons flour
2 tablespoons margarine
salt and pepper to taste

Melt margarine over low heat. Add flour and salt and pepper; stir until smooth. Add milk and cook over medium heat until thickened. You may add grated cheese if you like.


Add any types of vegetables you have on hand.  Look for those little bits of leftovers from previous meals such as corn, green beans, peas.  You can also add leftover cook potatoes cut into cubes.  OR you could mix in leftover pasta or rice.

Make a Casserole:
Mix together casserole items of your choice.  Pour into a greased baking dish and bake at 350 degrees until hot, about 20 minutes or until toppings are done.

If you would like you could top the casserole with uncooked biscuits, cornbread or mashed potatoes.

Add in diced potatoes or other additions.

Casseroles are a versatile way to make use of many things. It’s a quick meal during busy times and a hot meal of comfort food on colder nights.
