3 Quick Chicken Recipes

We love chicken. For those buying our chicken, or looking to stock up, here are some yummy ways to use it.

Two Step Chicken

4 boneless chicken breast halves, browned in a tablespoon of vegetable oil in hot skillet.

Add a can of Cream of Mushroom or Cream of Chicken soup and a half cup water.  Simmer until done. Easy!!

Chicken Tacos

1 pound boneless skinless chicken, cut into 1/2-inch cubes
2 tablespoons plus 1 teaspoon lemon juice, divided
1 large onion, sliced
1 green onion, sliced
2 garlic cloves, minced
2 teaspoons olive or canola oil
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
2 plum tomatoes, seeded and chopped
1/4 cup minced fresh cilantro or parsley
8 flour tortillas (8 inches), warmed
1 cup shredded lettuce
1/2 cup salsa

Place chicken in a large resealable plastic bag; add 2 tablespoons lemon juice. Seal bag and turn to coat; refrigerate for 1-2 hours.

In a nonstick skillet, saute the onions and garlic in oil until tender. Add the chicken, cumin, salt and pepper. Cook and stir for 4 minutes or until juices run clear. Remove from the heat; stir in the tomatoes, cilantro and remaining lemon juice. Spoon onto tortillas; top with lettuce. Serve with salsa. Yield: 4 servings.

Crockpot chicken

Put 4 chicken breasts/fillets in the crockpot (or debone leg quarters!)
Add 1 jar of your favorite salsa
Add 1 bag of frozen corn (or the new savory vegetables in a can…mexicorn variety is great).
Cook on low heat for 6 hours
Serve over white rice…or cooked,diced potatoes.

Chicken is great many ways, and these recipes are also a good way to use diced rabbit! Whether you buy your meats direct from the farm, raise your own or buy at the store, these are tasty meals for a variety of tastes.
