Easy, Tasty, Healthy Mexican Meals

I recently came across a statistic from the University of Utah that indicated eating authentic Mexican cuisine can cut breast cancer risk by one third. Authentic is key here…that means homemade, not Taco Bell.

Here are some key points to help you enjoy a little variety and cut costs and eat healthy.

Watch the beef – use lean meat on your taco. Notice I didn’t say eliminate.  Use a  couple of ounces of lean beef, diced chicken or rabbit can add to the meal and minimize the grease.

Try using some with fish – perhaps seviche or snapper Veracruz.

Try a tablespoon or Cotija or feta cheese instead of cheddar.

Pile on the salsa. What’s not to love here? Healthy tomatoes, flavorful peppers, diced onions and garlic hold fiber, antioxidants and low fat. Make it at home and can it in your own kitchen, and you’ll know exactly what’s in it!

Add in the beans – rich in nutrients.

Load up on produce. Colorful peppers, lettuce, tomatoes, onions and herbs. Try some variety!

Use whole wheat or corn tortillas – higher in fiber and other goodies. The whole wheat tortillas don’t change the taste substantially – add another pepper to the salsa and you won’t taste a thing! *smiles*

Don’t forget the rice.

These items are easy on the budget, offer a variety of tastes, and break up the “boredom” of eating at home. With bold tastes embraced, it’s a lively meal that is healthy too.
