Inexpensive Thanksgiving Meal Starts New Traditions

OLYMPUS DIGITAL CAMERAThe holidays are a bad time for the money to be short and yet too often that is exactly when things build up. If you can’t do the full turkey and trimmings or are just looking for inexpensive Thanksgiving dinner recipes consider an alternative.

For those in rural areas with land consider taking tradition to what we can get from the land. For many this can mean venison. If you’re not a hunter you can consider allowing a reliable hunter access to your land for a roast from the deer. Use the roast for almost as inexpensive of a dinner as you can get – free and handed to you!

Still others look to other options and one of these is a nice lasagna. Put together a salad and dessert and it’s a simple dinner that doesn’t cost a great deal of money.

An easy lasagna for 6-8 people can be made that may not be a traditional turkey but may begin a new tradition! Brown and drain a pound of ground beef or ground turkey. The “pre-seasoned” Italian ground turkey for 99cents each at Wal-Mart would work wonderfully for this. Add ½ cup chopped onion and cook until tender. Stir in a one pound can of diced tomatoes, 6 ounce can tomato paste and 1/3 cup water. Add a clove of minced garlic (or garlic powder), teaspoon oregano and ¼ teaspoon pepper. Cover and let this simmer for about a half hour while you prepare the 12×8 baking dish. Gather a ½ pound lasagna noodles, cooked, 12 ounces mozzarella cheese, ½ pound Velveeta cheese (sliced) and ½ cup parmesan cheese. In the baking dish layer 1/3 of the noodles, then a layer of mozzarella, meat sauce, Velveeta slices and Parmesan. Layer the same order until all are included. You can make this the night before and store in the refrigerator or prepare and put straight into a 350F oven for a half hour, adding another 20 minutes if it’s been refrigerated, making sure it’s heated al the way through. Let stand for about 10 minutes when removing from the oven.

A salad, garlic bread and homemade dessert can make this a winner of a dinner and it can easily be doubled.

The memories around the table make the meal special. The thankfulness for what we have even in the face of things that go wrong can bring the true spirit of Thanksgiving. Make some memories.
