Crockpot chicken & dumplins

4 boneless skinless chicken breasts, cut in small chunks (or leftover chicken, turkey, diced rabbit)
2 cans condensed cream of chicken soup
1/4 cup onion, finely diced
2 cups water
2 10 oz packages refrigerated biscuits
1 chicken bouillon cube

Combine all ingredients, except biscuits, in slow cooker. Cover and cook on low for 5 to 6 hours. 30 minutes before serving, tear biscuit dough into 1-inch pieces. Add to your slow cooker; stirring gently. Cover and cook on HIGH for an additional 30 minutes or until biscuits are fluffed up and cooked through.

Ham N Cheese Casserole
A strata-type recipe with ham, eggs, cheese, and bread cubes.

2 tablespoons butter
1/2 cup chopped onion
2 green onions, sliced
5 slices bread, cubed
2 cups diced leftover or fully cooked ham
1 cup shredded mild cheddar or American cheese
1 tomato, chopped
3 beaten eggs
1 1/4 cup milk
1/8 teaspoon dry mustard
PREPARATION:

Melt butter in a small saucepan over low heat. Add chopped onion; cook until tender. Add green onion, bread cubes, diced ham, cheese, and chopped tomato. Stir gently to mix. Transfer ham and cheese mixture to a lightly buttered 8-inch square baking dish.

Combine eggs, milk, and dry mustard. Pour over ham mixture in baking dish. Bake at 350° for 25 to 30 minutes, until set. Ham and cheese recipe serves 4 to 6.

Serves: 4

1 Unsliced French Bread loaf (1 pound)
1 Pound Ground beef
1 Can Condensed cheddar cheese, undiluted (10-3/4 can)
1 Each Medium green pepper, chopped
1 Stalk Celery, chopped
1 Tablespoon Worcestershire sauce
1 Teaspoon Salt
1/2 Teaspoon Pepper
4 Slice Processed American cheese, halved

Cut off top of bread. Carefully hollow out the bottom of the loaf, leaving approx. a 1/2 inch shell. Cut removed bread into small cubes and set aside. In a skillet, brown beef; drain. Add
soup, green pepper, celery, Worcestershire sauce, salt & pepper. Cook and stir for 3-4 minutes. Stir in the reserved bread cubes. Spread into bread shell. Top with cheese. Replace bread top.
Place on an ungreased baking sheet. Bake at 350 degrees for 6-8 minutes or until cheese is melted.
